The fabulous Tina from @TheBarefootHousewife has created the perfect sweet treat with THE SUPER ELIXIR by WelleCo greens.
1 cup of raw almonds
1 cup of pitted dates
1 tbs raw cacao powder
1 cup of raw cashews (soaked for a few hours, rinsed & drained)
1 cup of tightly packed fresh mint
1/4 cup of coconut cream
1/4 cup of fresh lime juice
3 tbs of coconut oil (liquid)
2 tbs lime zest
1 tbs coconut syrup
1/4 tsp spirulina (optional for a brighter green colour)
Process your base ingredients until they stick together, but still have some texture from the almonds.
Press into your tart cases & pop into the freezer while you make the filling.
Blend or process all your filling ingredients until you have a smooth consistency.
Taste & add more sweetener if you like.
Spoon into your tart shells & chill in the freezer for an hour.
Decorate with cherries, lime zest & mint.
