Our co-founder Elle Macpherson dishes on what she eats in a day, and shares three of her favourite recipes.

On waking: Filtered water and 2 heaped teaspoons of THE SUPER ELIXIR and lemon juice or a green juice packed with vegetables and lemon juice. 

Breakfast: I like a poached egg on spinach once a week. The other days, I alternate between just fresh fruit until lunchtime, or a chia or flaxseed pudding (but never within 2 hours of eating fruit). 

Mid-morning – A WelleCo Chai Latte that I top up with warm almond milk. It’s packed with powerful herbs like Siberian ginseng, gingko, turmeric and prebiotic fibre, and is a really satisfying and delicious alternative to my usual espresso.

Lunch: I generally always have greens with whatever I eat at lunch, which is often a vegan salad with a base of pulses, lentils or quinoa. I load it up with leafy greens and other vegetables, especially kale, spinach, sprouts and rocket.

Afternoon snack:  I make a NOURISHING PROTEIN by WelleCo smoothie with homemade almond or hemp milk. It’s easy to make when you are on-the-go. Being plant-based, our protein is easily absorbed by my body, boosts my metabolism and helps me feel fuller for longer.

Dinner:  My evening meal sometimes consists of fresh line-caught fish, (the other day Cy caught crayfish!) with lots of greens, salad or vegetables. Or sometimes I will have just vegetables. I prefer to eat raw vegan as much as possible, and use a dehydrator which is a fabulous preparation alternative.

Snack: I don't have dessert every day, but I do love dark chocolate and vegan ice-cream. Our Nice-Cream Sandwich is a good combination of both – and it’s tastes really good! 

 

Recipes

WelleCo Chai Latte 

Dissolve 1 tablespoon of WelleCo Chai Latte powder into a small amount of hot (not boiling) water and stir until dissolved. Top with 1 cup of warm or frothed almond milk, and stir until combined.

Elle’s 3pm smoothie

You will need: 1 heaped scoop of the Chocolate NOURISHING PROTEIN by WelleCo, 400ml almond milk and half a frozen banana. Simply shake, blend and drink.

WelleCo Nice-Cream Sandwiches 

Cookie base

1/2 cup desiccated coconut
3/4 cup almonds
3/4 cup pitted dates
2 scoops Vanilla NOURISHING PROTEIN by WelleCo

Blend, roll into biscuits and refrigerate.

Coconut filling

2 tablespoons coconut nectar (honey, maple syrup or any sweetener) 
1/2 cup cashews
200g coconut yoghurt
1 scoop Vanilla NOURISHING PROTEIN by WelleCo

Create mini sandwich, freeze and share 😋
